Whisk together liquids- olive oil, red wine vinegar and black pepper.
Chop/Dice cucumber, cherry tomatoes, red onion, and avocado into medium sized bowl.
Cube feta cheese and place on top of vege’s
Pour liquid mixture on top of vege’s
Toss gently so the feta and avocado don't break up. Serve immediately.
Fried Green Tomatoes
1 quart vegetable oil for frying
1/4 teaspoon ground black pepper
1/2 cup milk
4 large green tomatoes
2 teaspoons coarse kosher salt
1/2 cup bread crumbs
1/2 cup cornmeal
1 cup all-purpose flour
Slice tomatoes 1/2 inch thick
Whisk eggs and milk together. Scoop flour onto a plate. Mix cornmeal, bread crumbs and salt and pepper on another plate. Dip tomatoes into flour, then dip the tomatoes into milk and egg mixture. Dip in breadcrumbs to completely cover.
In a large skillet, pour vegetable oil (enough so that there is 1/2 inch of oil in the pan) and set on medium heat. Place tomatoes into the frying pan in batches of 4 maybe 5, to not crowd the tomatoes while frying. When the tomatoes are browned, flip and fry them on the other side. Drain them on paper towels. Serve.
