Summertime Tomato Salad

Ingredients

  • 1½ cups of chopped Cherry tomatoes (yellow & red)
  • 1 medium cucumber- diced
  • 1 avocado - diced
  • 1 tbs chopped red onion
  • 2 tbs olive oil
  • 1 tbs red wine vinegar
  • 8 black pepper
  • ½ cup of cubed feta cheese

Instructions

  • Whisk together liquids- olive oil, red wine vinegar and black pepper.
  • Chop/Dice cucumber, cherry tomatoes, red onion, and avocado into medium sized bowl.
  • Cube feta cheese and place on top of vege’s
  • Pour liquid mixture on top of vege’s
  • Toss gently so the feta and avocado don't break up. Serve immediately.

Fried Green Tomatoes

Ingredients

  • 2 eggs
  • 1 quart vegetable oil for frying
  • 1/4 teaspoon ground black pepper
  • 1/2 cup milk
  • 4 large green tomatoes
  • 2 teaspoons coarse kosher salt
  • 1/2 cup bread crumbs
  • 1/2 cup cornmeal
  • 1 cup all-purpose flour

Instructions

  • Slice tomatoes 1/2 inch thick
  • Whisk eggs and milk together. Scoop flour onto a plate. Mix cornmeal, bread crumbs and salt and pepper on another plate. Dip tomatoes into flour, then dip the tomatoes into milk and egg mixture. Dip in breadcrumbs to completely cover.
  • In a large skillet, pour vegetable oil (enough so that there is 1/2 inch of oil in the pan) and set on medium heat. Place tomatoes into the frying pan in batches of 4 maybe 5, to not crowd the tomatoes while frying. When the tomatoes are browned, flip and fry them on the other side. Drain them on paper towels. Serve.
